Book excerpt: Cassava roots deteriorate rapidly after harvest. Deterioration is either physiological or microbial but the former generally occurs within 48 of harvesting. Experimental results show that physiological deterioration can be prevented either by pruning the plants 2-3 wk before harvest or by packing the roots in polyethylene-lined paper bags after harvest. Microbial deterioration can be prevented by dip-treating the roots with broad-spectrum fungicides such as Manzate.
